Slow Cooker Kheer - Slow Cooker Rice Pudding

For many people traditional Indian food seems time consuming to make. However, using slow-cooker you can make many exotic Indian dishes very simple.

Here is one example of such adaptation. Rice Pudding or Kheer is available in most Indian Restaurants during buffet in US. Usually, it takes 2-3 hours of constant stirring on stove-top to make Rice Kheer know as Milk and Rice Pudding.

Using Slow-Cooker this time will increase to anywhere from 6-7 hours, but it is in-active time. You can go run some errands or just sit and watch TV while Kheer is cooking!

There is no worry about making sure constantly that Kheer is not sticking to bottom of the vessel. Here is the recipe of making Rice Kheer or Rice and Milk Pudding using slow cooker.

Slow-Cooker Kheer

Ingredient
1. 1 liter (34 Oz) whole milk
2. 1/2 liter(16Oz) half and half milk
3. 1/2 cup rice
4. 2/3 cup sugar
5. 1/4tsp cardamom powder
6. Almond and pistachio for garnishing

Method
1.Wash rice and soak in a 1/2 cup water for one hour
2.In a heavy saucepan, boil milk on medium-high heat on stove-top. (If you have a slow-cooker bowl that will go on stove-top as well as in slow-cooker then you can use same bowl. If you do not want to boil the milk on stove-top, directly put it in slow-cooker. This will just increase the cooking time by another hour or so.)
3.Set slow cooker on high.
4. Transfer milk and sugar in slow cooker bowl.
5. Drain water in the rice and break the rice little bit and transfer it to slow-cooker. (This will reduce the cooking time.)
6. Do not cover slow cooker
7. Every one hour stir the milk to make sure layer of cream is breaking and mixing well with kheer.
8. After 6-7 hours kheer will be ready.
9. Transfer Pudding/Kheer in a serving bowl, add cardamom powder and mix it well. Garnish with almond and pistachio.
10.Put it in refrigerator to let it cool. Enjoy.

Microwave Ricotta Cheese Burfi

Things have been pretty busy and I haven't gotten chance to post anything lately. So without any further delay, just in time for Diwali, a simple and quick recipe to make burfi or barfi using Microwave. In past I have made this burfi on stove-top but this time I just made this quick version in microwave.

Preparation Time: 5 minute
Cook Time: 12 minute

Ingredient:

1. 1 cup ricotta cheese ( Mawa )
2. 1/3cup + 1tbsp sugar
3. 2 tsp ghee ( butter )
4. 1-1/2 tsp un-sweetened cocoa powder
5. 2 pinch cardamom powder

Method Step By Step:

1.In a microwave safe bowl combine ricotta cheese ( mawa ), sugar and ghee ( butter ). Mix it well.
2. Cover it and put it in microwave for 5 minutes.
3. Give it good stir after 5 minutes.
4. Again put in microwave and keep steering about every 3 minutes.
5. After about 12 minutes you should see that mawa mixture is coming together and does not stick to the bowl. That is when burfi should be done. Mix it well and split in 2 equal parts.
6. Add cardamom powder in one part. Mix well and spread in a greased plate.
7. Add cocoa powder in second part, mix it well and spread it on top of white part.
8. Let it cool down for about 4 hour and then cut it in pieces.

My niece Swati makes best ice creams. She always told me to try her recipe. She said it is very simple recipe, it requires 5 easily available ingredients and hardly needs 10 minutes of prep time to make base ice cream and then I could make multiple flavors of ice cream. I never gave it a try until recently. Now I wonder why I never tried her recipe. It really took me only 10 minutes of prep work and I made 4 different flavors of ice creams. Ice cream turns out to be so creamy and delicious. Do give it a try and let me know how do you like this recipe.

Carrot Halwa or Gajar Halwa Using Slow Cooker

Carrot Halwa is one of the most famous Indian dessert. It is sweet dish made using milk, carrots and sugar during many auspicious occasions or festivals. Traditionally this carrot and milk pudding is made using khoya or mawa to give is grainy texture. Here in this recipe I have used ricotta cheese to get the same texture.

When made on stovetop making carrot halwa is extremely tedious  process. Stirring shreded carrot, milk and sugar takes hours and not to mention splittering of carrot mixture all over. Using slow-cooker or crockpot you can enjoy carrot halwa anytime without any fuss.

Try these other sweet recipes like Sakkarai Pongal, milk pudding (basudi), kheer using slow-cooker/crockpot.

Preparation Time: 15 minute
Cook Time: 5 hours
Serve 6 to 7 people ( As a side dish )

Ingredient:
1. 1 pound carrot
2. 2/3 cup sugar
3. 1 cup whole milk

4. 1/2 cup Candace milk
5. 1/2 cup ricotta cheese ( mawa/khoya )

6. 4tbsp ghee (Make Ghee in slow cooker/crockpot))
7. 1tsp cardamom powder
8. 2tbsp resin
9. 10 to 15 cashew pieces

Method Step By Step

1.Wash and peel carrots. Shred carrots very fine.

2. Spread slow-cooker bowl with 1tsp ghee or butter.
3. Combine 2 tbsp ghee, carrot, sugar, milk and condense milk  in a slow cooker
4. Cover slow cooker and set on high.

5. After 2 and 1/2 hour give the carrot mixture good stir and remove the cover.

6. Cook for another 2 and 1/2 hour keeping the slow-cooker open, stirring about every 45 minutes to make sure carrots are not sticking to the wall of slow-cooker bowl.

7. Carrot halwa should be done now.

8. Transfer in a serving bowl.
9. In a small sauce pan take 2tbsp ghee. Put it on medium heat on stove top.
10.Now fry cashew and raisin until they are pink. Add them in halwa along with ghee.
11. Add cardamom powder and mix it well. Carrot Halwa is ready to serve.

Cool down and put it in freeze. It will stay good for 3-4 days. It will stay fresh in freezer for 2-3  weeks.

2.Slowly add cold water and make soft dough. Kneed dough well. Cover it with plastic wrap and put in freeze.

2. In a sauce pan take butter and put it on medium high heat. After butter is melted, add apple cubes.
3. Stir apple cubes for a minute and then add sugar to it.

Method for Small  Pie

1. Divide pie crust in 10 equal portions

Pie is ready to serve. Verdict? - Both my grand kids absolutely loved it. For 5 minutes that they were eating the pie, there was no noise at all. My daughter called me about same time they were eating pie and she asked why there is no noise. Where are the kids !  Hope you love this mini apple pie recipe just as much as my grand kids. Chocolate Burfi or Milk Halwa recipe using ricotta cheese

We used to make burfi scratch from milk in past. It would require stirring for hours on low flame to make fresh burfi or milk halwa. Using Ricotta cheese burfi or halwa making becomes very simple. Burfi is very versatile bite size dessert. You can add any flavor essence and color to suit your taste or occasion. I have added pink color and rose essence in past for a girl baby shower. You can add pistachio essence and green color for a Christmas time gift giving. Here I have used coco powder to make two layer chocolate burfi. 5.1/4tsp cardamom powder
6.2 drop rose essence ( optional )

Step By Step Instructions:

1.In a sauce pan combine ricotta cheese, sugar and ghee. Put it on medium-high flame on gas stove.
2.Stir until mixture leaves the pan. (This should take about 30-45 minutes)
3.Now add cardamom powder and essence in a  half part. Mix it well and spread it in greased plate.
4.Add coco powder in other half part, add 1tsp milk and stir it well. Now spread chocolate part on white part.
5. Apply silver paper ( varakh ) if you have it available. It is optional though.
6 .Let it sit in freeze until it is cool. Cut the pieces and store it in air tight container.

Rabadi or Basudi is usually made during festivals or for small gatherings. If you are using stove top then making rabadi or basudi is very time consuming affair. Making basudi using slowcooker will take couple of hours but you won't be standing in front of stove stirring milk continuously. You can make this item 2 to 3 days in advance and keep it in refrigerator for later use. It taste really good with puri ( Indian puff bread). It can also be served with malpua, Indian flat bread/roti, bread or even ice cream.
