Slow Cooker Kheer - Slow Cooker Rice Pudding

For many people traditional Indian food seems time consuming to make. However, using slow-cooker you can make many exotic Indian dishes very simple. 

Here is one example of such adaptation. Rice Pudding or Kheer is available in most Indian Restaurants during buffet in US. Usually, it takes 2-3 hours of constant stirring on stove-top to make Rice Kheer know as Milk and Rice Pudding. 


Using Slow-Cooker this time will increase to anywhere from 6-7 hours, but it is in-active time. You can go run some errands or just sit and watch TV while Kheer is cooking! 

There is no worry about making sure constantly that Kheer is not sticking to bottom of the vessel. Here is the recipe of making Rice Kheer or Rice and Milk Pudding using slow cooker.

Slow-Cooker Kheer

Ingredient
1. 1 liter (34 Oz) whole milk
2. 1/2 liter(16Oz) half and half milk
3. 1/2 cup rice
4. 2/3 cup sugar
5. 1/4tsp cardamom powder
6. Almond and pistachio for garnishing

Method
1.Wash rice and soak in a 1/2 cup water for one hour
2.In a heavy saucepan, boil milk on medium-high heat on stove-top. (If you have a slow-cooker bowl that will go on stove-top as well as in slow-cooker then you can use same bowl. If you do not want to boil the milk on stove-top, directly put it in slow-cooker. This will just increase the cooking time by another hour or so.)
3.Set slow cooker on high.
4. Transfer milk and sugar in slow cooker bowl.
5. Drain water in the rice and break the rice little bit and transfer it to slow-cooker. (This will reduce the cooking time.)
6. Do not cover slow cooker
7. Every one hour stir the milk to make sure layer of cream is breaking and mixing well with kheer.
8. After 6-7 hours kheer will be ready.
9. Transfer Pudding/Kheer in a serving bowl, add cardamom powder and mix it well. Garnish with almond and pistachio.
10.Put it in refrigerator to let it cool. Enjoy.

Vegetable Khichdi In Slow cooker

Khichdi or Khichuri is my go-to comfort food. In many region of India it is made with slight variation of spices. However basic concept is same. Rice and Split Lentils (Dal) are cooked together with some kind of tempering.

Khichuri is also one of the very basic recipe used in Indian medical science also know as Ayurveda for cleansing, balancing and healing.

I love this Everyday Ayurveda Cookbook for natural eating and for healthy gut where you can find many such healthy recipes.

You can make simple khichdi by just adding tempering of cumin seeds and salt/turmeric to rice/dal mixture.

Today's recipe is an elaborate version sometimes also known as badshahi khichdi (royal khichdi).  You can make khichdi on stove top or in pressure cooker or rice cooker. For this recipe I have used slow cooker.

Some of the spices used in recipe below are traditional Indian spices and are all easily available in any Indian Grocery store. You can also purchase this Indian Spices Starter Kit which includes all the below listed spices and many more without worrying about significant investment.


Preparation time : 10 minute
Cook time:2 to 1/2 hour ( 4 hour to soak dal )
Serves: 6 People

Ingredients to make Khichdi:

1. 1 cup rice
2. 1/2 cup pigeon peas dal
3. 1 cup cube cut eggplant
4. 1/2 cup cube cut potato
5. 1/4 cup fresh green pigeon peas ( optional )
6. 1/3 cube cut onion
7. 2 clove nicely cut garlic
8. 1/2tsp green chili ginger paste
9. 1/2tsp red chili powder
10. 1/4tsp turmeric powder
11. 12 black pepper corn
13. hand full peanuts
14. salt to taste
15. 2-1/2 cup hot water

Tempering:

1. 1tbsp oil
2. 2 tbsp ghee (replace this with oil if you prefer vegan)
3. 1 tsp mustard seeds
4. 1 tsp cumin seeds
5. 5 clove, 5 small cinnamon, 2 whole red chili

Method to make Khichdi in Slow Cooker:

1.Soak dal in a boiling water for 4 hours.
2. Soak rice in water for 2 hours.
3. Once dal and rice are soaked, combined all ingredients in a slow cooker.
4. Now prepare tempering:
   - Combine oil/ghee, mustard seeds. cumin seeds and whole red chili  in a sauce pan.
   - Put it on medium  heat on stove top.
   - After mustard seeds cracks, add clove and cinnamon. Turn off stove top.
5. Add tempering in the slow cooker.
6. Add 2-1/2 cup hot water in slow cooker and mix it well.
7. Cover slow cooker and set on high.
8. After 2-1/2 hour vegetable khichdi will be done.

Enjoy hot khichdi with vegetable curry, kadhi (tempered buttermilk), or yogurt.

How To Make Jam Using Slow Cooker

Few weeks back we went for strawberry picking with our grand-kids and ended-up picking lot more strawberries than we would consume. How can you blame two very excited 5 year olds !

Two of my Hetzler 3-in-1 Berry Boxes did really good job of keeping strawberries in good shape for more than 2 weeks. They are great value for money and great product to have to reduce the wastage of berries. So even though my Berry Boxes are great help, I needed to make some room in my freeze. So I ended up making some mix-fruit Jam with those freshly picked strawberries.

Just like my Mango Jam, I made this mix-fruit jam using slow cooker as well so no worries about stirring to make sure Jam is not sticking and not splatters of Jam all over the kitchen !

It was very simple to make Jam in crockpot. All I did was crushed the fruits and mixed them with sugar. Rest work was done by my slow-cooker !


Preparation Time 10 Minute
Cook Time 4 hours 20 Minute

Ingredients:
1. 2 cup shredded apple
2.1 cup pineapple puree
3. 1/2 cup strawberry puree
4. 1 cup pineapple  juice ( optional )
5. 2 1/4 cup sugar
6. 2 tbsp lemon ( lime ) juice

Method of making Jam in Crockpot:

1. Combine fruits and sugar in a slow cooker bowl and mix them well.

2. Set slow cooker on high. Make sure to not cover the slow cooker.
3. After about 4 hours mix the fruit puree well and churn it with hand-mixer.
4. Cook for another 20-30 minutes or so until desired consistency is reached.
5. Now transfer jam in a bowl and add lemon juice. Again mix it well.

6. After jam is completely cool, transfer it in a mason Jar.

Jam will be good in freeze at least 1 month in freezer for 6 months. Enjoy with these healthy eggless dinner rolls or with this eggless cinnamon raisin bread.

Slow Cooker Chocolate Cashew Cluster and Mother's Day Gift Idea

Some time back I had talked about homemade mother's day gift  ideas using slow cooker. Today I am posting one of the similar homemade mother's day gift - Chocolate Cashew Clusters. It is such a simple recipe. Takes only three ingredients. There is really no prep time - other than may be gathering these ingredients.

Cashew Clusters came out really good. I made some extra to share with neighbors and they loved it too.

Back to recipe for Chocolate Cashew Clusters:

Prep Time: 5 Minutes
Cook Time: 1.5 Hours on High Setting

Ingredients:

1. 6 Oz. Semi-Sweet Chocolate Chips
2. 1 Cup Broken Cashew Nuts
3. 1/2 Can Condense Milk

Method:

1. Layer cashew at the bottom of slow cooker.
2. Top it with Condense milk and then Semi-Sweet Chocolate Chip.
3. Cover slow cooker with a paper towel and then cover the lead. (Paper towel is used to make sure water does not drip in the cashew cluster)
4. Check every 30 minutes to make sure chocolates are melting fine.
5. After about hour and 30 minutes, chocolates should be well melted.
6. Now scoop one table spoon mixture at a time and place it on wax paper.

7. Let it dry overnight and Cashew Clusters should be ready to eat.
8. They will store well in refrigerator for 2-3 weeks.

Potato, Peas, Tomato Curry In Slow Cooker

Last week  I posted about how to make khichdi or khichadi in slow cooker. Today I am posting this simple curry that goes very well with khichadi. In our gujarati household it is called tameta, bataka, vatana nu shak (tomato, potato and peas curry).

All you need is some chopped potatoes, tomatoes and peas. All these are usually found in our refrigerator. Just need little bit of tempering and put it in slow cooker.  This curry or shaak goes well with roti  or paratha as well.

List of spices mentioned below seems little elaborate but they are all easily available in any Indian Grocery store. You can also purchase this Indian Spices Starter Kit which includes all the below listed spices and many more without worrying about significant investment.



Preparation Time: 10 Minutes
Cook Time: 2 hour
Serves: 5 To 6 people

Ingredients for tameta, bataka, vatana nu shaak:

1. 3 cup cube cut potato ( I use Vidalia Chop Wizard  to make cutting/chopping easy.)
2. 1 cup cube cut tomato
3. 3/4 cup frozen green peas
4. 1/2tsp red chili powder
5. 1/4tsp turmeric powder
6. 1/2tsp coriander powder
7. 2/1/2tsp brown sugar ( jeggari )
8. salt to taste
9. 2tbsp nicely chopped coriander leaves
10. 1-1/2 cup hot water

Tempering:
1. 2tbsp oil
2. 1/2tsp mustard seeds
3. 1/2tsp cumin seeds
4. pinch of asafetida

Method To Make Tameta, Bataka, Vatana Nu Shaak: 

1. Combine potato, spices and water in a slow cooker.
2. In a small sauce pan combine oil,  mustard seeds and cumin seeds.
3. Put it on medium heat on stove top.
4. When seeds pop, add asafetida. Turn off stove and combine tempering in a slow cooker.
5. Cover slow cooker and cook for about 2 hours.
6. Once potatos seem cooked, add green peas and tomato and mix it well.
7. Take out about 2tbsp of potato mixture out of slow cooker and mesh very well. Mix this back to the curry in slow cooker. This will help thicken the gravy.
8.  Transfer curry in a serving bowl and sprinkle with coriander leaves.

Curry or Shaak is ready to serve. Enjoy with roti, paratha, rice or khichdi

Slow Cooker Whole Wheat Pizza

My daughter has been making whole wheat pizza for some time now in oven. However few weeks back when I blogged about making pizza in slow cooker in my round up about slow cooker vegetarian game day recipes, she at once tried whole wheat pizza in slow cooker.




She used her usual whole wheat pizza dough recipe but this time in slow cooker. Results were amazing. In-fact she liked the slow cooker version better as it was little moist and soft compare to oven counter part. Slow Cooker method is so easy now she makes pizza for kids school lunch too !

My daughter had picked up this whole wheat dough recipe from Cookie and Kate with some adjustments. I am posting it here with her adjustments.

Prep Time: 10 minutes
Cook Time: 45 minutes

Ingredients to make whole wheat pizza dough:


1.    1 cup water (warm) - need little over 1 cup water but can be adjusted as needed
1.    1 tablespoon sugar
1.    1 tablespoon olive oil
1.    1 envelope (2¼ teaspoons) instant yeast
1.    2¾ cups whole wheat flour (or regular wheat flour) + 1 spoon rice flour (optional - it helps digestion)
1.    ¼ cup grated Parmesan cheese (or any other grated cheese)
1.    1 1/2 teaspoon sea salt

Method to make Pizza Dough:


1.    Whisk warm water, sugar, oil and yeast in bowl really well then and let it sit for 5 minutes. It should puff up some by then.
2.    Mix flour, cheese and salt well. Add water/oil/yeast/sugar mixture to make soft dough. Knead it well on a floured work surface. Dump the dough onto a floured work surface and quickly knead dough a few times until it comes together. Halve the dough.
3.    Pizza dough is now ready to be used either in oven or in slow cooker. Below is the slow cooker method.

Method to make Pizza in Slow Cooker:


1. Apply oil liberally in slow cooker bottom.
2. Take half the dough or as per your choice of thickness and size of the slow cooker and press it evenly in the slow cooker bottom.
3. Apply pizza sauce. Top with choice of vegetables and shredded cheese.
4. Cover slow cooker with a paper towel and then close the lead. This will make sure mist does not drop on the pizza and but it will give really nice softness to pizza.
5. Turn on slow cooker on high and let it cook for about 45 minutes.
6. Check if pizza is done by inserting toothpick. If toothpick comes out clean then pizza is done.
7. Turn off the heat. Take out the slow cooker bowl and put it on side to cool down.
8. Let the pizza cool down for 15-20 minutes before taking it out and serving.

Eggless Slow Cooker Desserts for Valentine's Day

Have you ever felt that going to restaurant on Valentines day is waste of time and money? Most restaurants are over crowded and food is prepared in rush. Well if you feel same way then here is wonderful collection of eggless desserts made in slow cooker. Most of these recipes require none or very minimal preparation. You can put all the ingredients in crockpot, sit back and relax.

Slow Cooker Vegetarian Super Bowl Recipes

Super Bowl is almost here and I have some wonderful vegetarian and eggless slow cooker/crockpot Appetizer, Main Dish and Dessert recipes to share with you, that you can easily make for Super Bowl Party or Pot Luck.

Appetizers:

1. Spinach Artichoke Dip is perfect appetizer for cold weather. Making it in slow cooker is as simple as dumping all ingredients in slow cooker ! Here is a recipe that requires very minimal and easily available ingredients. This is one more similar simple recipe of slow Spinach Artichoke Dip but with southwest touch.

2. Chilli Con Queso: Another dip recipe great for cold weather is Chilli Con Queso served with warm corn tortilla chips. This recipe is very straight forward and uses easy to find pantry ingredients.

3. Spicy/Sweet Roasted  Nuts: Not so much of appetizer but great for munching here are some great recipes for curry roasted nuts or cinnamon roasted sweet almonds made in crockpot !

4. Vegetarian Tortilla soup: Vegetarian version of classic Tortilla soup slow cooked in Crockpot will be great addition for a cold game night gathering.

Main Dish:

5. Slow Cooker Vegetarian Chilli: Black Beans and Mushroom slow cooked entire day with spices will make great supper at the end of the day on the game night. Ingredient list for this recipe seems little long but they are all easy to find pantry ingredients. Or you can try this Sweet Potato Chilli which adds a healthy twist with addition of Quinoa.

6. Slow Cooker Pizza: No Super Bowl Party will be complete without Pizza. Here is a simple fix it and forget it Vegetarian Pizza recipe using slow cooker.

7. Vegetarian Sloppy Joe: This is a vegetarian Sloppy Joe recipe made using Pinto beans and some vegetables in slow cooker. Little bit of prep work is done outside of slow cooker but yet, most of the work is done in slowcooker.

Opo Squash ( doodhi ) Lauki ) Vegetable In Slow Cooker

If you liked slow cooker spinach daal or gujarati kadhi you will surely like this simple Opo Squash and daal combination made even more simpler in slow-cooker. This is gujarati style vegetable known as 'Dudhi Chana Ni Daal Nu Shak' This is great addition for quick week night dinners or for packed lunches.

How to make dudhi chana ni dal nu shak in slow cooker:



Preparation Time : 5-7 minutes ( time to soak dal: 3 hours) 
Cook time: 4 hours

Ingredient:

1. 1/2 cup split chick peas ( chana dal )
2. 2 cup cut opo squash (doodhi/lauki ) or approximately 250 gram

3. 2 1/4 cup hot water
4. 1 tsp red chili powder
5. 1/4 tsp turmeric powder
6. salt to taste
7. 1 tsp coriander powder
8. 2 tbs jaggari/brown sugar

9. 2 tbs tomato puree or 1 small chopped tomato
10. cilantro

Tempering:
1. 2 1/2 tbs oil
2. 1/2 tsp mustard seed
3. 1 tsp cumin
4. 2 pinch asafoetida

Method:
1. Soak dal for 3 hour in a very hot water

2. After 3 hour drain the water.
3. Add all ingredients from 1-6 in slow cooker bowl, mix them well and set slow cooker on high. Let it cook for about 4 hours.

4. After 4 hour, prepare tadka/tempering in a small frying pan. Put small pan on medium heat. Add oil, mustard seed and cumin seeds. Once they crack, add asafoetida and immediately pour in slow cooker.
5. Now add Jaggari/brown sugar. Dissolve it well and sprinkle with coriander powder and mix it well.
6.Transfer in a serving bowl and sprinkle  with cilantro.
7. Opo Squash and Daal is ready to be served with rice, chapati, paratha etc.

Kansar Recipe Using Slow Cooker: How to Make Kansar in Crockpot

If you liked my last post regarding Traditional Gujarati recipe Kadhi using slowcooker or crockpot, you will also like this another Gujarati Traditional recipe kansar or kamsar using slowcooker. Kansar is made on auspicious occasions and also year round just to satisfy sweet tooth. My grandkids take Kansar in lunch box almost once a week or every other week along with Vegetable Pulav or spinach moong daal also made in crockpot.

Preparation Time : 5 minute
Cook Time : 50 minute
Serve : As a side dish 4 people

Ingredients:


1.1 cup coarsely ground wheat flour
2. 1/2 cup powder jiggery( brown sugar )
3. 1-1/3 cup water
4. 3tsp oil
5. 3 to 4 tsp ghee (How to make ghee in crockpot)
6. powder sugar for serving

Method Step By Step: How to make Kansar


1.Add oil in flour and mix it well
2. Put flour and jiggery in a slow cooker bowl
3. Add hot water and 1tsp ghee
4. Mix it very well
5. Cover slow cooker and set it on high 
6. After about 50 minute kansar should be cooked

7.  Mix it well
8. Take it in a serving dish and sprinkle powder sugar and ghee on it before serving.

Slow Cooker Gujarati Kadhi or Tempered Buttermilk Recipe

Kadhi is a traditional recipe from Gujarat region of India. It is very simple preparation of yogurt and some tempering which is very comforting food.  Kadhi is usually served with Khichadi (rice and daal preparation) or puranpoli (roti stuffed with sweet daal).  While cooking on stovetop Kadhi is should be cooked on low flame else it curdles and it also overflows. This makes Kadhi a very obvious choice for slowcooker or crockpot cooking. Here is the slowcooker version of traditional gujarati kadhi.

Preparation time: 10 minutes
Cook time: 1 hour
Serves: 4 people

Ingredients:

1. 3/4 cup yogurt
2. 1-1/2 tbs chick peas flour ( chana dal flour/gram flour )
3. 2- 1/2 cup water
4. salt to teats
5. 2 tsp sugar
6. pinch of turmeric powder (optional)
7. 2 big cut green chili or as per taste
8. chopped coriander leaves for garnishing

For Tempering

1.2 tsp ghee ( oil ) How to make Ghee using crockpot
2.1/2 tsp mustard seeds
3.1 tsp cumin seeds
4.8 clove
5.2 small cinnamon stick
6.10 curry leaves

Method Step By Step:
1.In mixing bowl add yogurt and flour and mix it very well so no clumps remain
2.Add water and all other items under the ingredients except for tempering ingredients.
3. This is Kadhi mixture to which we will add tempering.

Tampering:

1.In a frying pan combine ghee,  mustard seeds and cumin seeds. Put it  on medium high flame on stove top.
2.After cumin and mustard seeds cracks, add clove, cinnamon and curry leaves.
3. Add this tempering to Kadhi mixture prepared above.
4. Transfer Kadhi mixture in a slow cooker bowl and cover it.
5. Set slow cooker on high.
6. After about 1 hour or so, taste Kadhi, if raw taste of gram flour is gone that means Kadhi is cooked.
7. Transfer Kadhi in a serving bowl and garnish with coriander leaves( cilantro ).

Serve hot with puranpoli,  roti, rice, pulav or khichadi.  I will be posting slow cooker Khichadi recipe soon. Come visit soon.

Slow Cooker Mango Jam Recipe: How to Make Mango Jam in Slow Cooker

Last year during mango season I had blogged about my mother's mango halwa recipe and how I made it in only 15 minutes using microwave. Today I am posting about my mother's another mango recipe, Mango Jam. I have adapted this recipe for slow cooker or a crockpot.

Preparation Time 10 Minute
Cook Time 4 Hours

Ingredients:
1. 3 cup fresh mango pulp

2. 2 - 1/2 cup sugar
3. 1 tbsp ghee (How to make Ghee using Butter in Crockpot)
4. 2 tsp lemon juice
5. 1 tsp ghee to spread in a cooker bowl


Method

1.Spread 1 tsp ghee in slow cooker bowl.
2. Combine mango pulp, sugar and ghee in a slow cooker bowl and mix it well.

3.Set slow cooker on high. Do not cover it.
4. After about 4 hours mango jam will be cooked.

5. Turn off slow cooker and let Jam sit for 5 to 10 minute.
6. Add lemon juice and mix it well.
7. Let Jam cool down before storing it in a jar.

Enjoy Mango Jam with this eggless Bun Bread or your choice of toast, bagel , waffle or roti. Jam will stay fresh for almost a month in refrigerator. You can store even longer in freezer.

Homemade Slow Cooker Gifts for Mothers Day

I was thinking to blog about my mom's special mango jam using slow cooker or crock pot on upcoming occasion of Mother's Day. That got me thinking about all the gifts that can me handmade using slow cooker for mom. So here I have collected some wonderful Slow Cooker Gift Ideas for mother's day. Some of these recipes are for edible gifts while some other are non-edible.

DIY Slow Cooker Edible Gift Ideas for Mothers Day:

1. Fudge:

This is a great recipe for slow cooker chocolate fudge by skinnims. Instead of cream it uses coconut milk to make it skinny ! It uses only 5 easy to find ingredients, combined with simplicity of slow cooker.


If you are looking for little bit more indulgence, here is crock pot white chocolate fudge by Get Crocked. (pictured above).  Jenn has added Candy Corn to her fudge but you can add dried cherries or nuts or anything else you prefer.

2. Jams, Jellies, Chutneys or Fruit Butter:

Making Jams and Jellies is so easy with slow cooker. All you need to do it combine chopped fruit and sugar with some spices of your choice. You can make them in bulk and pack in mason Jars of various sizes and shapes. Tie with nice ribbon and tag to make a yummy homemade gift. I recently made simple mix fruit Jam in slow cooker. I kept one batch in freeze and another in freezer. The on that was kept in freeze is still as fresh as it was made almost a month later. I will be posting recipe for this mix-fruit jam shortly. 3. Cookie Bar, Pound Cake or Cheese Cake

No need to turn on oven during hot summer months to make cookies, cakes or cheese cake. Here are some very simple crockpot recipes for chocolate chip cookie bar , Upside Down Pineapple Cake or Hazelnut Cheesecake (pictured below) that anyone would love to receive as gifts.
                                         
4. Nuts:

5. Candies and Brittles

Non-edible homemade slow cooker gift idea for mothers day:

1. Slow Cooker Soap:

2.  Slow Cooker Lotion Bars:

I plan to make these bars even for my grandkids. They are at the age where they want to do everything by themselves. I usually refrigerate coconut oil in little bars and give them to massage themselves. Those bars start melting quickly. This recipe for crockpot lotion bars (pictured below) seems perfect solution for this problem and will also be a great DIY gift to pamper someone special.



3. Slow Cooker Candles:

How To Make Ghee ( Clarified Butter ) In Slow cooker

Ghee is one of the very common ingredient in Indian cooking. It is also used very heavily in traditional Indian medicine also known as Ayurveda and to light holy lamp (diya) in temples and in homes. Ghee is also approved for Paleo Lifestyle .

Me and my daughter have been making ghee at home from butter (unsalted) for a long time on stove top. Few months back my daughter had put butter on stove top to make ghee and she had to attend to kids on middle of it and she ended up burning her ghee ! Since than she has tried making ghee in crock pot and it came out great.

So here is step by step recipe to make ghee in slow cooker. If you do not have slow cooker or would like to follow stove top method, I have provided variation at the bottom of the post.

How To Make Ghee

Ingredients:

2 pound sweet cream butter (unsalted)

Method: Making Ghee in Crockpot/Slow Cooker

1. Place butter in slow cooker and set slow cooker on high. Do not cover it.

2. In 30 minutes or so butter starts melting.

3. About 2 hours into the process butter is melted and is boiling. You can see foam on top.

4.Little over three hours later foam is breaking apart. Water part from butter is evaporating.

5. 4 hours later, all the foam is gone and you can see slight brownish tint. Ghee is ready now.
6. Filter ghee with a Stainless Steel Strainer or cheese cloth. Do not use plastic utensil as ghee is very hot and will melt them. Also please be careful while filtering the ghee as it is very hot and it might burn you.

7. You may store at room temperature or in freeze. It will stay fresh for couple of months at room temperature also.

Variation:
If you do not have slow-cooker or if you wish to make ghee on stove top, you can just put butter in a heavy bottom vessel and put it on low-medium flame. You can follow its melting process just like mentioned in pictures above. Just that it will be much quicker. For 2 lbs it will be about 45 minutes or so.
